Scharffen Berger
October 17th, 2007 by T-FreshIf you’re ever in the market for a good dark chocolate, you can’t go wrong with Scharffen Berger. Tonight I tried their Semisweet 62%, Bittersweet 70%, and Extra Dark 82% bars. The back of the labels gives you an idea of what the cacao percentage will taste like, and they’re dead on. It’s amazing how a cocoa bean can taste fruity. The Semisweet says it offers hints of citrus with honey overtones. The Bittersweet delivers complexity of flavor, bright fruitiness and a lasting finish. And the Extra Dark suggests the flavors of dried figs with a mild peppery spiciness reminiscent of red wine. That is so true, it has a tang like red wine. Amazing.
